Use Holiday Meal Leftovers to Make Something New!
After the holidays, you might find yourself staring at a container of leftover turkey and wondering what to do with it. This cozy, flavorful chili is the perfect way to give those leftovers new life. With cooked turkey and sweet potatoes already on hand, it comes together quickly—perfect for an easy weeknight meal. (And if you don’t have leftovers, no worries—we’ve included an option for starting from scratch, too!)
Ingredients
2 tablespoons Field Day canola oil
2–3 cups cooked turkey, shredded OR ½ pound turkey sausage, casings removed
2 cups cooked sweet potatoes, cubed. If starting with raw sweet potatoes instead: use 2 small sweet potatoes, peeled and chopped into small pieces.
1 medium yellow onion, chopped
1 red bell pepper, seeded and chopped
2 cloves garlic, minced
1 (14.5-ounce) can Field Day diced tomatoes, undrained
2 cups Field Day chicken broth
1 cup water
1 tablespoon Field Day chili powder
1 tablespoon Field Day cumin
½ teaspoon Field Day cayenne pepper
½ teaspoon salt
1 (15-ounce) can Field Day cannellini beans, drained and rinsed
Additional salt and pepper to taste
Preparation – If Using Leftovers
Warm oil in a large pot over medium-high heat.
Add onion and bell pepper to the pot.
Add garlic and sauté for 1 minute.
Stir in diced tomatoes, broth, water, spices, and salt. Bring to a boil.
Add shredded cooked turkey, cooked sweet potatoes (if using), and beans.
Reduce heat to medium-low, cover, and simmer until the chili thickens slightly, about 20–30 minutes.
Taste and season with additional salt and pepper as needed.
Preparation from Scratch
Warm oil in a large pot over medium-high heat.
Add raw ground turkey or turkey sausage, break it into small pieces and cook until no pink remains. Transfer the sausage to a bowl and set aside.
Add onion, sweet potatoes and bell pepper to the pot. Cook, stirring occasionally, until sweet potatoes begin to soften, about 6 minutes.
Add garlic and sauté for 1 minute.
Return sausage (if using) to the pot.
Stir in diced tomatoes, broth, water, spices, and salt. Bring to a boil.
Add in beans.
Reduce heat to medium-low, cover, and simmer until the chili thickens slightly, about 20–30 minutes.
Taste and season with additional salt and pepper as needed.
This recipe is a great way to use holiday leftovers! Sweet potatoes are a tasty way to add important nutrients to your diet like Vitamin A, fiber and even protein. Substitute your favorite sausage, ground meat or meatless alternative if you prefer. Have fun topping the chili; try a spoon of plain yogurt, cilantro, diced avocado or tortilla chips – you can’t go wrong!
