Meld together the flavors of summer with this delightfully fruity fruit salad.
Sweet and tart stone fruit pair beautifully with fresh mint and a bit of lemon, particularly on a hot day. Add a bit of honey if you feel so bold, but either way, you’re sure to enjoy this spoonful of summer.
Ingredients:
2 Nectarines
2 Plums
2 Peaches
¼ cup mint leaves
1 lemon
1 Tablespoon honey (optional)
Instructions:
Cut up all your fruits into small pieces. I find that the best way to do this is in a similar way that you can cut a mango into cubes. First, cut slices into the fruit on one side. Then cut across it to make a grid. Next, cut down through the middle, just off-center to avoid the pit of the fruit. Repeat this for the other half, then cut away any large pieces still clinging to the pit.
Once all your fruits are cut, put them in a large bowl and set them aside.
Chop your mint into very small pieces. This will keep your salad from becoming too chewy and bring out the flavor of the mint.
Add your mint to the bowl and stir well.
Cut your lemon in half and juice it. Pour the juice into the bowl and stir well to combine.
Finally, add your honey if desired and mix everything once more.
Serve on its own, or perhaps on top of some ice cream or a yogurt parfait, and enjoy.
