This classic summer street food comes in many forms and formats, but today we’re enjoying it as the salad, esquites.
Esquites is a flavorful, savory, tangy corn salad chock full of cilantro, lime, and cheese with just the right amount of spice. Eat it on its own, serve it as a side, or however you see fit to best enjoy it.
Ingredients:
1 bag frozen corn
3 cloves garlic, minced
2 tablespoons oil
½ cup fresh cilantro
½ cup fresh green onion
2 tablespoons mayonnaise
1 tablespoon lime juice (or juice from 1 lime)
2 ounces crumbled cotija cheese or feta cheese
Salt to taste
Chile powder or chile flakes to desired spice level
Instructions:
In a skillet over medium high heat, add your corn and oil. Let the corn get crispy on each side before flipping. Repeat this process until your corn is brown and crispy and all sides.
While your corn is crisping up, you can chop up your green onion and cilantro. Once chopped, put them in a large mixing bowl and set it aside.
Once your corn has crisped, add your garlic and sauté until fragrant.
Once the garlic and corn are ready, transfer them into your mixing bowl with your herbs.
Add your mayo, lime juice, cheese, salt and chile to the mixing bowl. Mix well until fully combined.
Serve immediately and enjoy as a snack or as a side. Keeps in the fridge for 4 days and reheat well.
