Looking for a healthy and delicious Game Day snack?
This cowboy caviar is perfect to “kickoff” your watch party with zesty and crunchy goodness. We’ve put our own twist on it that’s sure to be a “touchdown” you and your guests will enjoy.
Ingredients:
2 15 oz cans of Field Day organic black beans
2 cups Cascadian Farms frozen sweet corn
1 organic red bell pepper
3 organic Roma tomatoes
2 organic avocados
½ organic white onion
1 organic jalapeno
⅓ cup organic cilantro
¼ cup green onion
⅓ cup + 1 tablespoon Field Day organic olive oil
2 tablespoons fresh organic lime juice
2 tablespoons organic red wine vinegar
¼ teaspoon Field Day organic garlic powder
½ teaspoon salt
½ teaspoon black pepper
Instructions:
Measure out your frozen corn.
In a skillet over medium high heat, add your corn and one tablespoon of olive oil. Let the corn get crispy on each side before flipping. Repeat this process until your corn is brown and crispy and all sides. Once your corn has crisped up, put it in a large mixing bowl and set it aside.
Drain and rinse your black beans. Put them in your large mixing bowl and set aside.
Dice your red bell pepper, roma tomatoes, white onion, cilantro, green onion, and avocado. Add them to your mixing bowl and set them aside.
Remove the seeds from your jalapeno pepper and dice it. Add it to your mixing bowl.
In another small bowl, add your 11/3 cup olive oil, red wine vinegar, lime juice, garlic powder, salt, and pepper. Mix well until combined.
Pour the dressing over the cowboy caviar and mix well until everything is evenly coated.
Let it sit for 1-2 hours for all the flavors to mix in, or overnight if you have time. Enjoy with tortilla chips while you kick back and watch the game.
