This incredibly flavorful and filling soup picked up steam online, and we’re here to tell you it’s worth every spoonful.
The rich flavor from gently steamed chicken, combined with the subtle sweetness and warmth from the apple and ginger, melt together into brothy goodness. Enjoy it on its own, or over rice for an even heartier meal.
Ingredients:
1 whole organic chicken
1 head organic cabbage
2 large carrots
1 organic apple (red apples are best for this recipe)
1 organic yellow onion
1 medium piece organic ginger (4 knobs or so)
2 tablespoons salt (or to taste)
Optional:
Rice for serving
Scallion
Instructions:
Have a very large soup pot with a lid at the ready.
Peel your ginger and slice it into slivers. Add it to the pot.
Peel and core your apple. Slice it into wedges and add it to the pot.
Peel and mince your yellow onion. Add it to the pot.
Peel and slice your carrots. Add them to the pot.
Chop your cabbage into strips and add it to the pot.
Cut away any undesired pieces from the whole chicken, but leave the skin on. Add it to the pot, setting it on the bed of your chopped ingredients.
Sprinkle everything with salt overtop.
Make sure your lid has a very firm seal and won’t allow any steam to escape. If you have a steam hole on your pot lid, you can use tinfoil to cover the lid by wrapping it several times. You can also use this method to make sure the seal is very tight and no steam escapes.
Turn the heat on to medium-low and steam for 60 minutes. Don’t remove the lid, or else the steam can escape. Listen for a light simmering sound to make sure it is steaming. You don’t need to stir it, as the heat is low enough not to burn any of the ingredients on the bottom of the pot. If you remove the lid and the chicken looks like it needs a bit more time, steam it in 15-minute increments until it is done.
Once the chicken is ready, you can take it out of the pot and separate the meat from the bones and skin. You can save the bones and skin to make broth, either right away or freeze them for later.
Break the meat into medium pieces and add it back into the pot.
Stir everything together to combine it and serve.
