Fall into autumn with this wonderfully spiced and cozy pumpkin coffee cake.
The rich pumpkin is complimented by warm spices and a sweet crunch of oat streusel topping. Enjoy it for breakfast with a cup of coffee, serve it a-la-mode, or however the spirit of fall compels you.
Ingredients for the oat streusel:
4 tablespoons butter, room temperature (dairy or nondairy)
¼ cup Field Day® organic all-purpose flour
¼ cup old fashioned oats*
½ cup Field Day® organic brown sugar
½ teaspoon cinnamon*
Ingredients for the cake:
2 cups Field Day® organic all-purpose flour
½ teaspoon salt
1 teaspoon baking soda
1 ½ teaspoon ground cinnamon*
1 ½ teaspoon ground nutmeg*
¼ teaspoon ground cloves*
¼ teaspoon ground ginger*
1 cup Farmers Market™ organic pumpkin puree
¾ cup Field Day® organic brown sugar
½ cup neutral oil (ex: avocado oil or canola oil)
⅓ cup milk (dairy or non-dairy)
Ingredients for the icing:
½ cup Field Day® Organic powdered sugar
1 tablespoon milk (dairy or nondairy)
¼ teaspoon Simply Organic® vanilla extract

Instructions:
Preheat your oven to 350°F.
First, make your oat streusel topping.
Add your butter, flour, oats, brown sugar, and cinnamon to a medium mixing bowl. Mix with a pastry cutter or until the mixture clumps together, like wet sand. You may have to work it in with your hands for a moment or two to get the right texture. Set aside.
Grease a 9-inch by 9-inch baking dish and set it aside.
In a large mixing bowl, add your flour, baking powder, baking soda, salt, and spices. Whisk together and set aside.
In another medium mixing bowl, add your pumpkin puree, oil, brown sugar, and milk. Mix until combined.
Pour the wet ingredients into the dry and mix until just combined. The batter will be thicker than typical cake batter, so be careful not to overwork it.
Pour the batter into your prepared pan.
Sprinkle your oat streusel on top of the batter. Try to spread it evenly, even out to the edges.
Bake for 35 minutes, or until a fork inserted in the center comes out clean.
While the cake is baking, you can make the icing.
Add your powdered sugar, milk, and vanilla extract to a small bowl.
Whisk until combined and set aside.
Once your cake has come out of the oven, let it cool for 5 to 10 minutes before drizzling the icing on top.
Cut the slices to your desired size and enjoy.
