Dining at home this Valentine’s Day?
Serve up a gourmet meal for two with this 5-star worthy Tuscan salmon pasta. It’s rich, creamy, and savory with just the right amount of zing to liven up your evening. Enjoy it with a lovely white wine and finish off with a dessert, and you’ll be transported to a fine-dining experience.
Ingredients:
2 cups penne pasta
2 salmon fillets
2 tablespoons olive oil
Salt and pepper to taste
2 cloves minced garlic
1 ½ cups spinach
½ cup sundried tomatoes, chopped
½ cup heavy cream
¼ cup shredded parmesan cheese
¼ teaspoon red chili pepper flakes
Juice and zest from 1 lemon
Parsley for garnish
Instructions:
Prepare your pasta according to the directions on the package.
While your pasta is cooking, heat 1 tablespoon of olive oil in a skillet.
Season both sides of your salmon fillets with salt and pepper, then place them skin-side down in your skillet.
Let the fillets cook for 3 minutes on the skin side, then flip them and cook for another 3 minutes.
Remove your salmon fillet from the skillet and onto a plate, then set them aside.
Put another tablespoon of olive oil in your skillet and add your garlic. Sauté until fragrant.
Add your spinach and chopped sundried tomatoes to the skillet. Sauté until the spinach has thoroughly wilted.
Reduce the heat to medium low, then pour in your heavy cream and shredded parmesan cheese. Stir until well combined.
Zest your lemon into the sauce, then squeeze the lemon juice into it.
Sprinkle your red chili flakes into the sauce and stir to combine.
Stir in your penne pasta and set your salmon fillets on top.
Allow everything to simmer lightly for 3 minutes, serve, and enjoy.
