15 ounce can chickpeas, rinsed, drained
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
2 tablespoons fresh lemon juice
1 tablespoons extra virgin olive oil
1 small garlic clove, minced
⅓ cup (packed) freshly grated parmesan cheese
Kosher salt to taste
- Rinse and drain chickpeas.
- Combine rinsed/drained chickpeas, chopped basil, chopped parsley, fresh lemon juice, extra-virgin olive oil, and parmesan in a medium bowl.
- Slowly and gently toss to blend all ingredients thoroughly.
- Season the chickpea salad to taste with salt and pepper and enjoy!
